1 block (7 oz) halloumi cheese, sliced

1 tbsp olive oil

½ cup pomegranate seeds

½ cup cucumber, diced

¼ cup red onion, finely chopped

2 tbsp fresh mint, chopped

Salt & black pepper to taste

🍋 For the Mint-Lemon Dressing:

3 tbsp olive oil

1 tbsp lemon juice

1 tsp lemon zest

1 tbsp honey or maple syrup

1 tbsp fresh mint, finely chopped

Salt & black pepper to taste

👩‍🍳 Instructions

  1. Prepare the Couscous

Place the couscous in a heatproof bowl. Pour in 1 cup of boiling water, cover with a lid or plate, and let sit for 5 minutes. Fluff the couscous with a fork and allow it to cool.

  1. Grill the Halloumi

Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat. Add the sliced halloumi and cook for 2–3 minutes per side until golden brown and crispy. Set aside.

  1. Mix the Salad

In a large bowl, combine the fluffed couscous with pomegranate seeds, diced cucumber, chopped red onion, and fresh mint. Season lightly with salt and pepper.

  1. Make the Dressing

In a small bowl, whisk together olive oil, lemon juice, lemon zest, honey or maple syrup, chopped mint, salt, and pepper until fully blended.

  1. Assemble the Salad

Drizzle the mint-lemon dressing over the couscous mixture and toss gently to coat. Top with the grilled halloumi slices.

  1. Serve

Serve immediately or chill in the fridge for 15–20 minutes. This salad is a refreshing meal on its own or a standout side dish for summer gatherings.
